British Scones

One of my favourite luxuries is the experience of a traditional Afternoon or High Tea. This British tradition began in the 1840s and may best be enjoyed in London with authentic scones and clotted cream. High Tea can be found all over the world however, especially in Canada; check out The Ritz-Carlton in Montreal or Salon Rosie-Lanoi in Pointe Claire Village! Or better yet – make your own at home!

Ingredients
2 cups unbleached all-purpose flour
2 Tbsp sugar
4 tsp baking powder
½ tsp salt
3 Tbsp unsalted butter, chilled
⅔ cup milk
1 egg yolk beaten with 1 Tbsp milk (for glaze)

Instructions
Preheat oven to 425F. Mix the flour, sugar, baking powder, and salt until well combined.
Add butter. Rub the mixture together, breaking up butter until the mixture resembles breadcrumbs. Add the milk slowly until your dough comes together with no lumps remaining. Spoon the dough onto a well-floured surface. Generously dust the top of the dough and knead the dough 2-3 times to coat with flour. Press the dough into a round that is roughly 1-inch thick and cut the dough into 2-inch circles. Place the rounds onto a greased and floured baking sheet. Brush them gently with the egg yolk and milk mixture. Bake the scones for 12-15 minutes until golden. Allow to cool then serve with strawberry jam and clotted cream.
