New Orleans Shrimp ‘Po’ Boy’ Sandwich

Ingredients
18 oz Popcorn Shrimp
1 tbsp Creole seasoning
4 French rolls
4 tbsp melted butter
1 tsp minced garlic
1 1/3 cups shredded lettuce

Remoulade sauce
1/3 cup mayo
2 tbsp horseradish sauce
1 tsp garlic
1 tsp sweet relish
1/2 tsp cayenne pepper
1 tbsp soy sauce
1 tbsp fresh squeezed lime juice

Instructions
Cook shrimp (if frozen, bake in oven according to package instructions). While shrimp cook, prepare the remoulade sauce. Combine mayonnaise, horseradish sauce, garlic, relish, cayenne pepper, soy sauce, and lime juice in a small bowl. Set aside. When shrimp are cooked through, remove from oven and sprinkle with Creole seasoning. Combine butter and garlic and spread on rolls. Warm rolls in the oven for 3-5 minutes. Layer lettuce, shrimp and a drizzle of remoulade sauce on each roll. Sprinkle additional Creole seasoning and a squeeze of lime. Serve with French Fries or your favorite salad.
